Courgettes, cheese and onion combined to make delicious rissoles. Serve with a bit of sour cream on top and garnish with a spring onion or chives. Yummy.

Serves: 4 

  • 2 cups grated courgette
  • 2 eggs, beaten
  • 1/4 cup onion, diced
  • 1/2 cup (60g) plain flour
  • 1/2 cup parmesan cheese, grated
  • 60g mozzarella cheese, grated
  • salt, to taste
  • 2 tablespoons vegetable oil

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. In a medium bowl, combine the courgette, eggs, onion, flour, Parmesan cheese, mozzarella cheese and salt. Stir well enough to distribute ingredients evenly.
  2. Heat a small amount of oil in a frying pan over medium-high heat. Drop courgette mixture by heaping tablespoonfuls and cook for a few minutes on each side until golden.
