    A tasty breakfast, lunch or dinner sandwich filled with a Spam omelette then topped with your choice of toppings. This is quick and easy in a pinch.

    Ingredients
    Serves: 1 

    • 1 tablespoon butter
    • 2 tablespoons finely chopped onion
    • 1 slice Spam(TM)
    • 1 egg, beaten
    • 2 slices bread
    • 1 slice processed cheese (optional)
    • 1 slice tomato (optional)

    Directions
    Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

    1. Melt butter in a small frying pan over medium-high heat. Saute the onion in butter until soft. Mash up the spam with a fork then add it to the frying pan. Cook for 2 or 3 minutes, until browned. Pour the egg into the frying pan so that it covers all of the meat and onion. Cook until firm, then flip to brown the other side.
    2. Place the egg and meat onto one slice of the bread and top with cheese and tomato if desired. Place the other piece of bread on top. Bread can also be toasted first.

    I actually grew up with my Mom making this on a regular basis because she grew up with HER Mom making it on a regular basis. The only change Mom made was using gov'ment cheese, she spread mayonnaise on the bread before making the sandwich, and sometimes, she would add lettuce.     Ok, so I received a can of Spam for Christmas - a relative back home didn't know you can get it in the US, and included it in a 'grocery care package' - and I didn't really know what to do with it. I thought I'd give this recipe a go, but was pretty certain I wouldn't like it. Well, I was wrong! I toasted the bread as suggested, and it was actually a very tasty sandwich.
