Cinnamon Roasted Pumpkins

This is a very eye catching (and delicious) side dish or dessert if you can find little pumpkins. Very autumnal and pretty!
4 small pumpkins, tops sliced off and seeds removed
450g apple sauce
1/2 teaspoon ground cinnamon
salt and freshly ground black pepper to taste
- Preheat oven to 160 degrees C. Lightly grease a medium baking dish.
- In a small bowl, mix apple sauce, cinnamon, salt and pepper. Spoon 1/4 of the mixture into the bowl of each pumpkin.
- Place pumpkins in the prepared baking dish. Cover with aluminium foil and bake in preheated oven 1 hour and 45 minutes or until tender.
Talk about festive! This is such a cute idea and it was a great not-so-sweet dessert.
