Egg and Milk Free Chocolate Cake
Although the cake has no eggs or milk, it's a chocolate cake that is moist, delicious and dark, a treat for all the family, and for any celebration.
Ingredients
Serves: 10
- 1 1/2 cups (190g) plain flour
- 1 cup (200g) white sugar
- 4 tablespoons (20g) unsweetened cocoa powder
- 1 teaspoon bicarbonate of soda
- 1/2 teaspoon salt
- 6 tablespoons (90ml) vegetable oil
- 1 tablespoon cider vinegar
- 1 teaspoon vanilla essence
- 1 cup (235ml) water

- Preheat oven to 180 degrees C.
- Sift flour, sugar, cocoa, bi carb soda and salt together into a 20 x 20cm ungreased cake tin. Make three depressions.
- Pour oil into one well, vinegar into second, and vanilla into third well. Pour water over all and stir well with fork.
- Bake for 30 to 40 minutes or until tooth pick inserted comes out clean. Coat with your favourite icing.

I'm making this in the form of cupcakes for my daughter's 1st birthday party. She is allergic to milk and eggs. So this is perfect! I did a trial run last night and these taste just like regular cake to me and my husband. Not so with some other recipes I've been trying... The recipe makes about 15 cupcakes. They baked for 25 min at 375. Came out just perfect. I used Pillsbury's cream cheese icing to frost them. It's milk and egg free too. Who would have thought? Thanks so much for this recipe.
