    Fresh okra and cherry tomatoes are salted, seasoned with pepper and garlic powder then roasted in olive oil. The panko breadcrumbs add an extra crunch.

    Serves: 2 

    • 250g fresh okra, cut into 1cm slices
    • 8 cherry tomatoes, halved
    • 1 tablespoon olive oil
    • sea salt and ground black pepper, to taste
    • garlic powder, to taste
    • 1/2 cup panko breadcrumbs

    1. Preheat an oven to 220 degrees C.
    2. Place the okra and tomatoes in a bowl. Pour in the olive oil and sprinkle with sea salt, pepper and garlic powder. Stir until the vegetables are coated with oil. Add the panko breadcrumbs and stir. Spread the vegetables on to a lightly greased baking tray. Roast for 13 to 15 minutes until the tomatoes are soft and the okra is lightly browned.
