Watermelon Salsa

    A delicious homemade salsa made of watermelon, chillies, vinegar and fresh coriander. This tasty dish is great as a dip with tortilla chips, or even served with fish.

    Serves: 32 

    • 8 cups cubed seeded watermelon
    • 1 bunch fresh coriander, chopped
    • 1/2 large onion, diced
    • 2 large jalapeno chillies - stemmed, seeded and minced
    • 2 cloves garlic, minced
    • 1 cup white wine vinegar
    • 1 teaspoon salt

    1. Stir the watermelon, coriander, onion, jalapeno chillies, garlic, vinegar and salt together in a bowl until evenly mixed. Cover then refrigerate overnight for best flavour.

    Loved it! Was unsure about the use of vinegar vs lime juice, but the combination with the sweetness of the watermelon was very tasty. I used red onion instead of white, and added some red/green pepper. The amount of liquid is a lot even though I let the chopped watermelon drain in a colander.     Very unique! I had left over watermelon and found this recipe. I had nothing to lose and wanted something different to do with watermelon. This is absolutely delicious.
