This is a great tuna fish taco recipe that is light yet filling thanks to refried beans. Delicious and easy.
1 (435g) tin refried beans
1/3 cup skim milk
2 (185g) tins tuna in water, drained
1 tomato, diced
1 fresh jalapeno chilli, seeded and chopped
1 fresh lime
1/2 cup grated lettuce
8 taco shells
1 cup salsa
1 avocado - peeled, pitted and sliced
- Place beans in pot over medium heat. Gradually add milk, stirring constantly, until beans are warmed through. Mix tuna fish, tomatoes, jalapeno chilli and lime juice together in a bowl.
- To assemble, scoop beans into taco shells. Top with tuna mixture, lettuce and avocado, and enjoy!
