    This is a great tuna fish taco recipe that is light yet filling thanks to refried beans. Delicious and easy.

    Serves: 4 

    • 1 (435g) tin refried beans
    • 1/3 cup skim milk
    • 2 (185g) tins tuna in water, drained
    • 1 tomato, diced
    • 1 fresh jalapeno chilli, seeded and chopped
    • 1 fresh lime
    • 1/2 cup grated lettuce
    • 8 taco shells
    • 1 cup salsa
    • 1 avocado - peeled, pitted and sliced

    1. Place beans in pot over medium heat. Gradually add milk, stirring constantly, until beans are warmed through. Mix tuna fish, tomatoes, jalapeno chilli and lime juice together in a bowl.
    2. To assemble, scoop beans into taco shells. Top with tuna mixture, lettuce and avocado, and enjoy!
