Tuna Tacos

    This is a great tuna fish taco recipe that is light yet filling thanks to refried beans. Delicious and easy.

    Serves: 4 

    • 1 (435g) tin refried beans
    • 1/3 cup skim milk
    • 2 (185g) tins tuna in water, drained
    • 1 tomato, diced
    • 1 fresh jalapeno chilli, seeded and chopped
    • 1 fresh lime
    • 1/2 cup grated lettuce
    • 8 taco shells
    • 1 cup salsa
    • 1 avocado - peeled, pitted and sliced

    1. Place beans in pot over medium heat. Gradually add milk, stirring constantly, until beans are warmed through. Mix tuna fish, tomatoes, jalapeno chilli and lime juice together in a bowl.
    2. To assemble, scoop beans into taco shells. Top with tuna mixture, lettuce and avocado, and enjoy!

    Since I like tuna and refried beans separately, I decided to give this a try, even though I couldn't picture these two ingredients together. As I suspected, this combination was too strange for me. I'm still giving it 3 stars for 2 reasons. One is that the recipe, made exactly as written, was edible, although not enjoyable. Two is that I thought this was great with cheese substituted for the tuna, which is how I ate the rest of it after the first serving.     This recipe has some good points to it, but overall does not work well together. I like the creaminess of the beans, and I also like the tuna lime mixture, but they absolutely do not taste good combined.  -  13 Aug 2011  (Review from Allrecipes USA and Canada)
