    If you like you can also add drained, chopped artichoke hearts to this simple but super filling tuna salad.

    Serves: 4 

    • 1 (185g) tin Italian tuna packed in olive oil, undrained
    • 1 (400g) tin chickpeas, drained
    • 60g black olives, diced
    • 1/4 cup chopped flat-leaf parsley
    • 1/2 red onion, diced
    • 1 lemon, juiced
    • 1/4 cup crumbled reduced-fat feta cheese, or more to taste
    • salt and ground black pepper, to taste

    1. Stir the tuna, chickpeas, olives, parsley, red onion, lemon juice and feta cheese together in a bowl. Season with salt and pepper.
