    A very quick and easy way to make a delicious vegetarian pasta dish! Perfect for a light dinner or lunch, especially in summer.

    Serves: 7 

    • 450g dry fettuccine pasta
    • 3/4 cup frozen green peas
    • 1 (400g) tin diced tomatoes, drained and juice reserved
    • 1 cup low-fat sour cream
    • 3/4 cup grated Parmesan cheese
    • ground black pepper to taste
    • salt to taste

    1. Cook pasta in a large pot of boiling water, adding peas just before pasta is done. Drain.
    2. Combine tomatoes, sour cream, parmesan and 1/4 cup reserved juice. Add pasta and peas. Salt and pepper to taste.
