    A good hearty casserole with beef mince, olives, egg noodles, corn, taco sauce and seasoning. Quick to throw together, and so good!

    Serves: 4 

    • 500g beef mince
    • 1 (400g) tin sweet corn, drained
    • 1 cup mild, chunky salsa
    • 1/4 cup sliced black olives
    • 3 1/2 cups cooked egg noodles
    • 1 (400g) tin kidney beans, drained and rinsed
    • 1/4 cup taco sauce
    • 1 (35g) packet taco seasoning mix
    • 1/2 cup tomato pasta sauce

    1. Preheat oven to 170 degrees C.
    2. In a frypan over medium heat, cook the beef mince until evenly brown; drain.
    3. In a 20x30cm baking dish combine the beef, corn, salsa, olives, cooked noodles, beans, taco sauce, seasoning mix and tomato pasta sauce.
    4. Bake in the preheated oven for 1/2 hour, or until cooked through.
