Three Hundred Chocolate Chip Biscuits

    I needed to make a lot of chocolate chip biscuits so I took a basic recipe and scaled it up with a cooking program. It worked well!

    Ingredients
    Serves: 150 

    • 12 1/2 cups (2 1/2 kg) white sugar
    • 12 1/2 cups (2 3/4 kg) packed brown sugar
    • 1.8 kg butter
    • 25 eggs
    • 1/3 cup vanilla essence
    • 1/4 cup bicarb soda
    • 36 1/3 cups (4 1/2 kg) plain flour
    • 1 1/2 tablespoons salt
    • 4.2 kg dark chocolate chips

    Directions
    Preparation:30min  ›  Cook:12min  ›  Ready in:42min 

    1. Preheat oven to 190 degrees C.
    2. In a very large bowl, cream sugars and butter. Add eggs and vanilla. Combine dry ingredients and add gradually to creamed mixture. Stir in chocolate chips.
    3. Scoop with ice cream scoop onto baking trays. Flatten balls with wet hands. Bake for 10-12 minutes or until they start to brown.

    Not a good cookie recipe at all. The dough was so firm it barely let the chocolate chips stick. When they were done, the inside was "uncooked" and the rest of the cookie was tough and way too crispy. Solid rock the next day.  -  17 Mar 2008  (Review from Allrecipes USA and Canada)

    I just want to say thank you for this recipe! I have another recipe for Soft Chocolate Chip Cookies and looking for one that turned out firm like my father in law loves... I did take out the Chocolate Chips and just added 1 pound of chopped almonds in one recipe and 1 pound of walnuts in another recipe. I did scale down the recipe to 18 servings.
