Classic Jewish Noodle Kugel

    Noodle kugel is incredibly easy to make and tastes so good! If you have the time grate fresh apples, but otherwise apple sauce works well.

    Serves: 12 

    • 450g egg noodles
    • 125g margarine
    • 4 eggs, beaten
    • 1 cup white sugar
    • 1 1/2 cups apple sauce (or freshly grated apples)
    • 1 teaspoon vanilla essence
    • 1 pinch ground cinnamon, for dusting

    1. Preheat an oven to 180 degrees C.
    2. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling stir in the egg noodles and return to a boil. Cook the pasta uncovered, stirring occasionally until the pasta has cooked through but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
    3. Place noodles in a large bowl. Mix margarine into the noodles until melted. Stir in the eggs, sugar, apple sauce and vanilla essence. Pour noodle mixture into a 20x30cm baking dish then sprinkle with cinnamon. Cover baking pan with aluminium foil.
    4. Bake in the preheated oven for 30 minutes. Uncover the kugel and bake until golden brown, 20 to 30 minutes.

    Exactly what I was looking for! Sweet, creamy, with a nice vanilla flavor. I sometimes add raisins. You can decrease the sugar if desired to 1/2 cup and it's still great.  -  30 Jan 2010  (Review from Allrecipes USA and Canada)


    Mmmm... Very good and makes the whole house smell delicious but I modified it by adding 2 tablespoons cinnamon into the mix, chopped pecans, white raisins, and I had to add a little more butter (3 tablespoons) and 2 more eggs because after I mixed it all together, it was too dry to bake. Also I substituted the sugar for splenda because thats all we have in the house and I didnt want to go out and buy more and it tastes fine!     Thank you for this simple recipe. I wanted to make a kugel with ingredients I already had in the house. I just finished making it. It tastes very close to the kugel my Bubby used to make. I can't wait till my son tries it.
