White fish such as tilapia is marinated with olive oil and lime juice and then pan-fried with tomatoes, chillies and coriander.


Serves: 4 

  • 4 fresh tilapia fillets
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • salt and ground black pepper to taste
  • 2 tomatoes, chopped
  • 2 fresh large green chillies, sliced into rings
  • 8 sprigs coriander leaves

  1. Lay tilapia fillets in a glass baking dish. Drizzle olive oil and lime juice evenly over the fish. Season with salt and pepper. Allow to sit at room temperature for 1 hour.
  2. Transfer tilapia to a non-stick frypan and pour the lime juice mixture over the fish. Scatter the tomatoes, chillies and coriander over the fillets. Cook over medium heat for about 4 minutes per side.
