    This is a good cake which can be made quickly with ingredients on hand. Don't add too much of the liquid from the fruit salad or it will be too moist to bake properly.

    Serves: 18 

    • 1 1/2 cups (300g) white sugar
    • 2 eggs
    • 2 cups tinned fruit salad
    • 2 teaspoons bicarb soda
    • 2 cups (250g) plain flour
    • 1/4 cup packed brown sugar
    • 1 cup chopped walnuts

    1. Grease and flour a square cake tin. Preheat oven to 170 degrees C.
    2. Mix together sugar, eggs, fruit salad, bicarb soda and flour. Pour batter into prepared pan.
    3. Mix the brown sugar and nuts together and sprinkle mixture onto the batter.
    4. Bake for 40 minutes or until done.
