Mexican Tortilla Lasagne

    This is a super easy way to make lasagne using tortillas instead of pasta. It has a Mexican twist that everyone will like.

    Serves: 12 

    • 1 kg lean beef mince
    • 2 (35g) packets taco seasoning mix
    • 4 cloves garlic, minced
    • 1/2 teaspoon cayenne pepper
    • 1 tablespoon chilli powder
    • 1/2 cup (125ml) water
    • 18 tortillas
    • 650g salsa
    • 1 cup sliced spring onion
    • 500g sour cream
    • 3 cups grated Cheddar cheese

    1. Place beef mince in a large, deep frypan. Cook over medium high heat until evenly brown. Drain then season with taco seasoning, garlic, cayenne pepper, chilli powder and water. Simmer for 10 minutes.
    2. Preheat oven to 190 degrees C. Grease the bottom of a 20x30cm baking dish.
    3. Place 6 tortillas into the prepared baking dish. Spread 1/3 of the salsa on top of the tortillas. Spread 1/2 of the meat mixture evenly over the salsa. Sprinkle with 1/2 of the spring onions. Drop 1/2 of the sour cream randomly over the spring onions. Top with 1 cup cheese. Repeat layers. Top with 6 tortillas, spread with remaining salsa and sprinkle with remaining cheese.
    4. Bake in a preheated oven for 30 to 45 minutes or until cheeses are melted.

    I made this for a casual dinner party and it was a hit. I made it as written except I used reduced-fat sour cream and cheese; it was still quite flavorful. I used a medium-heat salsa in the recipe; it was too spicy for the small kids but those of us who love a lot of heat needed to add some extra hot salsa on top. I also served with fresh guacamole for topping, YUM!! Based on all the great reviews, I went ahead and put together an extra casserole to freeze for later, and I'm so glad I did!  -  04 Feb 2007  (Review from Allrecipes USA and Canada)


    This was very good, my husband and I both really liked it. I did use flour tortillas instead of the corn ones which made it better. We also thought that next time I make it I will put a layer of refried beans and guacamole in it. We think it will make it even better.
