Sugar Free Fruit and Nut Muffins

Dates, raisins and prunes provide the sweetness in these delicious and moist sugar free muffins. Enjoy.


Serves: 12 

  • 1 cup chopped dates
  • 1/2 cup raisins
  • 1/2 cup chopped pitted prunes
  • 1 cup (250ml) water
  • 125g butter, cut into pieces
  • 1/4 teaspoon salt
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla essence
  • 1 cup (125g) plain flour
  • 1 teaspoon bicarb soda
  • 1/2 teaspoon baking powder
  • 1/2 cup chopped walnuts

  1. Preheat oven to 180 degrees C. Grease and flour a muffin pan or use patty cups. In a saucepan over medium-high heat, combine dates, raisins, prunes and water. Boil for 5 minutes then stir in butter and salt; set aside to cool.
  2. When fruit mixture is cool transfer to a large bowl. Beat in eggs and vanilla. Stir together flour, bicarb soda and baking powder, then blend into fruit mixture. Fold in nuts. Spoon into muffin cups 2/3 to 3/4 full.
  3. Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted into the centre comes out clean. Allow to cool.
