    My kids love this cake which is very easy to make. It's made with marshmallows and frozen strawberries.

    Ingredients
    Serves: 24 

    • 1 cup miniature marshmallows
    • 500g frozen sliced strawberries, thawed
    • 1 (85) packet strawberry jelly crystals
    • 2 1/4 cups plain flour
    • 1 1/2 cups white sugar
    • 125g margarine
    • 3 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 cup (250ml) milk
    • 1 teaspoon vanilla essence
    • 3 eggs

    1. Preheat oven to 180 degrees C. Grease bottom only of a 20x30cm baking dish. Sprinkle the marshmallows evenly over bottom of pan. Thoroughly combine completely thawed strawberries with jelly crystals; set aside.
    2. In large mixing bowl, mix flour, sugar, baking powder and salt. Make a well in the centre and add margarine, milk, vanilla and eggs. Blend at low speed until moistened, then beat 3 minutes at medium speed, scraping sides of bowl occasionally. Pour batter evenly over marshmallows in pan. Spoon strawberry mixture evenly over batter.
    3. Bake at 180 degrees C for 45 to 50 minutes until golden brown and toothpick inserted in centre of cake comes out clean.
