Spaghetti and Broccoli Stir Fry

    This meal is ready in minutes and very filling. Soy sauce adds a depth of flavour to the vegetables.

    Serves: 4 

    • 250g spaghetti
    • 2 tablespoons olive oil
    • 2 cloves crushed garlic
    • 1 onion, sliced into thin rings
    • 2 skinless, boneless chicken breast halves - cut into bite-size pieces
    • 2 cups broccoli florets
    • 2 cups cauliflower florets
    • 2 cups julienned carrots
    • 2 tablespoons soy sauce
    • salt to taste
    • ground black pepper to taste

    1. Bring a large pot of water to a boil. Cook spaghetti pasta in boiling water until al dente. Drain.
    2. Meanwhile, heat oil in a large frypan or wok over medium-high heat. Cook garlic in oil for 1 minute. Stir in onion and cook until soft. Stir in chicken and cook until juices run clear. Mix in the broccoli, cauliflower and carrots then cook for 2 to 5 minutes, stirring frequently. Season with soy sauce, salt and pepper.
    3. Toss pasta with vegetables and serve warm.

    This recipe was delicious!!!I made some adjustments by leaving out the chicken and adding red and green peppers & celery along with the other veggies and added half teaspoon of red pepper flakes to cooked onions, let it sit with the onions and garlic 5 min. before adding the rest of the vegs.  -  30 Mar 2010  (Review from Allrecipes USA and Canada)
