Steamed Garlic Zucchini

    This is a quick way to prepare healthy zucchini. You'll love what a little crushed garlic adds to this easy dish.

    Serves: 4 

    • 4 zucchini
    • 2 cloves garlic
    • 1 tablespoon olive oil

    Preparation:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Bring a large pot of water to a boil. Trim ends from zucchini. Cut each one in half, then cut each half lengthways into quarters.
    2. Place zucchini and garlic into a steamer basket, then place the steamer basket into the pot. Steam for 10 to 15 minutes, or until the zucchini are tender.
    3. Transfer zucchini to a large bowl. Crush the garlic and put it in the bowl with the zucchini. Drizzle the olive oil into the bowl and toss until the vegetables are coated with oil and garlic.

    Fast, easy and delicious. I did make a few changes. I steamed the cut zucchini for about six minutes in the microwave, then drained the liquid and arranged it in a baking pan. I drizzled it with a mixture of olive oil and garlic, and sprinkled it with salt, pepper, lemon juice and shredded Parmesan cheese.     I'm a huge fan of zucchini and this is a great way to prepare it. I made it a little easier by steaming it in the microwave - zucchini never takes long to steam just few minutes. I only let it get tender crisp, then lightly scored it, sprinkled it with a bit of olive oil, salt, pepper, and garlic then roasted it in the oven at 400 until done.
