Iced Apple Sauce Cake

    This is a delicious spiced apple cake with an icing made of cream and sugar. Great for a change from chocolate!

    Serves: 12 

    • 2 cups (250g) plain flour
    • 1/4 teaspoon salt
    • 1 teaspoon baking powder
    • 1/2 teaspoon bicarb soda
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground cloves
    • 125g margarine
    • 1 1/2 cups (300g) white sugar
    • 2 eggs, beaten
    • 1 cup thick, unsweetened apple sauce
    • 1 cup raisins
    • 2 cups (400g) packed brown sugar
    • 1 cup (200g) white sugar
    • 2 tablespoons light golden syrup
    • 2/3 cup (160ml) thickened cream

    1. Preheat oven to 180 degrees C. Line a 20cm square pan with baking paper.
    2. Sift together flour, salt, baking powder, bicarb soda, cinnamon and cloves. Set aside.
    3. Cream margarine and sugar until fluffy, add eggs and beat well. Fold in apple sauce and flour mixture. Mix well. Fold in raisins.
    4. Pour batter into pan. Bake for 45 to 50 minutes, or until a skewer inserted into centre of cake comes out clean. Remove from oven and let cool to room temperature before icing.
    5. Icing Instructions: In a saucepan, combine brown sugar, white sugar, golden syrup and cream. Cook, covered, over low heat 2 to 3 minutes to dissolve sugar crystals. Uncover and cook to soft ball stage (115 degrees C).
    6. Cool to lukewarm, then beat to a spreading consistency and spread over cake.
