Slow Braised Beef

    In this recipe stewing steak is first marinated overnight in wine, orange juice and spices and then braised until meltingly tender. Use in sandwiches or serve with mashed potatoes.

    Serves: 6 

    • 1kg diced stewing steak
    • 3 oranges, juiced
    • 4 tablespoons white wine
    • 1 teaspoon olive oil
    • 1 teaspoon dried crushed chillies
    • 2 bay leaves
    • 2 cloves garlic, crushed
    • 1 teaspoon paprika
    • 1/4 teaspoon ground allspice
    • salt and freshly ground black pepper to taste

    1. Rinse beef and place in large bowl. Pour in orange juice, wine, oil and chillies. Add bay leaves, garlic, paprika, allspice, salt and pepper and toss to coat. Cover and refrigerate overnight.
    2. Heat a heavy frying pan over medium heat. Cook beef in marinade until beef shreds easily, about 1 hour. Add water as needed.

    This dish had an interesting flavour (garlic/peppery/orange) and the meat turned out tender yet firm. I marinated the meat for 24 hours which it needs to make sure the flavours are maximized. Don't know why the recipe says to add water during cooking as the marinade reduced down to a nice gravy to serve over the meat and rice. My boyfriend thought it was wonderful so I will be making it again!  -  29 Sep 2008

    The meat was very tender. Unfortunately, even though I followed the recipe exactly, there was not much flavour. I expected more flavour with these ingredients. Sorry, but thank for sharing.  -  29 Sep 2008
