Cevapcici are a delicious little Serbian sausage without a skin. Serve them by themselves or in a pita.

    Serves: 4

    • 680g pork mince
    • 450g lean beef mince
    • 225g lamb mince
    • 1 egg white
    • 4 cloves garlic, minced
    • 1 teaspoon salt
    • 1 teaspoon bicarb soda
    • 2 teaspoons ground black pepper
    • 1 teaspoon cayenne pepper
    • 1/2 teaspoon paprika

    Directions
    Preparation:10min  ›  Cook:30min  ›  Ready in:40min

    1. Preheat the grill for medium-low heat.
    2. In a large bowl, combine the pork mince, beef mince, lamb mince and egg white. Add the garlic, salt, bicarb soda, black pepper, cayenne pepper and paprika. Mix well using your hands, and form into finger length sausages about 2cm thick.
    3. Lightly oil the grilling surface. Grill sausages until cooked through, turning as needed, about 30 minutes.

When my husband and I were newlyweds, living in a small German village, one of our favorite restaurants was one called The Balkan Grill, my husband always ordered the cevapcici. I was so excited to come across this recipe and it did not disappoint! It was delicious! My husband raved and thought it was real close to what he had had in Germany. He also spent lots of time in Bosnia, so this was a nice trip down memory lane for both of us. Thanks for sharing this great recipe.  -  11 Apr 2005  (Review from Allrecipes USA and Canada)

My husband was raised on Cevapcici and claims this is the real deal. We don't have a grill so I baked them for 30 minutes in a 350 degree oven. They came out nice and brown on the outside and were cooked through on the inside. Very tasty.  -  17 Feb 2008  (Review from Allrecipes USA and Canada)
