    Ground almonds, chopped apple, raisins and cinnamon make a fantastic topping for your favourite pancake recipe. Great for a special breakfast.

    Serves: 2 

    • Pancake
    • 100g plain flour
    • 50 ml milk
    • 1 egg
    • 1 teaspoon sugar
    • pinch of salt
    • Apple Topping
    • 50g butter
    • 25g sugar (brown or white)
    • 2 apples of choice, peeled and diced
    • 40g raisins
    • 1 teaspoon ground almonds
    • 1 teaspoon cinnamon

    1. Pancake: Combine all flour, milk, egg, sugar and salt in a bowl then whisk until smooth.
    2. Oil the frying pan and pour or scoop the batter into the pan using about 1/4 cup for each pancake. When the top begins to bubble, turn the pancake over. Repeat, transfer to a plate to keep warm.
    3. Apple Topping: Melt butter and sugar over low heat. Add the apples, raisins, almonds and cinnamon then cook until heated through and apples are soft.
    4. Serve the pancakes with the spiced apple mixture spooned on top.

    Made about 10 pancakes. Insufficient milk meant the mixture was too thick. Apple topping was nice. - 30 Jan 2016
