    This is a very simple sauerkraut cake recipe with a very moist texture everyone will love. Ice with cream cheese icing.

    Serves: 18 

    • 2 cups (250g) plain flour
    • 2 teaspoons baking powder
    • 1 teaspoon bicarb soda
    • 1 teaspoon salt
    • 2 teaspoons ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1 1/2 cups (300g) white sugar
    • 2 tablespoons molasses
    • 4 eggs
    • 1 cup (235ml) vegetable oil
    • 450g sauerkraut, drained and rinsed
    • 1 apple - peeled, cored and finely chopped
    • 1 cup chopped pecans

    1. Whisk together flour, baking powder, bicarb soda, salt and spices.
    2. In a large bowl, combine oil, molasses and sugar with an electric mixer. Mix in eggs. Blend in dry ingredients. Stir in sauerkraut, apples and nuts by hand. Pour batter into a greased and floured 20x30cm pan.
    3. Bake at 170 degrees C for 35 minutes. Remove from oven, and cool on a wire rack.
