Cupcakes with Salad Dressing
Salad dressing in a cupcake? It really works. This recipe is formulated for cupcakes, and is not suitable for a cake.
Ingredients
Serves: 12
- 1 1/2 cups (185g) plain flour
- 1 1/2 teaspoons bicarb soda
- 1/3 cup (30g) unsweetened cocoa powder
- 3/4 cup (180ml) creamy salad dressing
- 1 cup (200g) white sugar
- 1 cup (250ml) warm water
- 1 teaspoon vanilla essence

- Preheat oven to 180 degrees C. Grease 12 muffin cups or use paper liners. Sift all-purpose flour, bicarb soda and cocoa together and set aside.
- Whisk salad dressing, white sugar, water and vanilla together until mixed thoroughly. Add flour mixture slowly and beat at medium speed of an electric mixer for 2 minutes. Divide batter into prepared muffin pans.
- Bake in preheated oven for 15 to 25 minutes.

Fantastic! I made these for my children's daycare. As easy as a mix, but much tastier! We iced them with the "Allspice Cream Cheese Frosting" from this site (it was leftover from our carrot cake) and it was great!
