    Nothing quite so satisfying as a barbecued chicken sandwich! My recipe has a honey mustard baste to give it some bite.

    Serves: 2 

    • 1 tablespoon honey
    • 1 tablespoon Dijon mustard
    • 1 (400g) tin sliced pineapple in juice
    • 2 skinless, boneless chicken breast fillets
    • 2 bread rolls, split
    • 1 red capsicum, thinly sliced

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat barbecue for medium high heat.
    2. In a small bowl, mix together the honey and mustard.
    3. Barbecue the chicken breasts and pineapple slices, brushing occasionally with honey mustard mixture, until chicken is done and juices run clear.
    4. Serve chicken on rolls topped with pineapple slices and red capsicum rings.

    Used different ingredients. I changed this slightly to make it easier for me. I used added a dash of ground cloves. It dissappeared quickly! My husband loves it! - 18 Jul 2008


    I fixed these tonight and we really liked them. I omitted the red pepper just because I forgot to buy one! Very good and I will surely make it again. - 18 Jul 2008
