    This recipe uses premade apple sauce for a quick, easy and moist cake. You can ice it or just dust it with icing sugar.

    Serves: 12 

    • 1 3/4 cups (210g) pastry flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 1/2 teaspoons ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1/2 cup margarine
    • 1 cup (220g) packed brown sugar
    • 2 eggs
    • 1/2 teaspoon vanilla essence
    • 1 cup apple sauce

    1. Preheat oven to 180 degrees C. Grease a 23cm square cake tin. Line the bottom of the pan with wax paper, or dust lightly with flour.
    2. Sir together flour, baking powder, salt and spices.
    3. In a large bowl, cream margarine. Blend in brown sugar, beating until light and fluffy. Beat in eggs and vanilla. Stir flour mixture into creamed mixture alternately with apple sauce; make 3 dry and 2 liquid additions, combining lightly after each. Turn batter into prepared pan.
    4. Bake for 40 to 45 minutes, or until cake springs back when lightly touched.
