    This cake is so easy to make your kids can help you do it. It was originally my grandmother's recipe.

    Serves: 8 

    • 1 1/2 cups (190g) plain flour
    • 1 cup (200g) white sugar
    • 1/2 cup unsweetened cocoa powder
    • 1 teaspoon bicarb soda
    • 1/2 teaspoon salt
    • 5 tablespoons vegetable oil
    • 1 teaspoon vinegar
    • 1 teaspoon vanilla essence
    • 1 cup (250ml) water
    • 60g dark chocolate, chopped
    • 60g margarine
    • 1/4 cup (65ml) water
    • 1 teaspoon vanilla essence
    • 2 cups (250g) icing sugar
    • 1 cup miniature marshmallows

    1. Preheat oven to 180 degrees C. Sift together the flour, sugar, cocoa, bicarb soda and salt. Sift once more, then sift again into a 23cm square pan.
    2. Make a well in the centre, and measure in the oil, vinegar and vanilla. Pour water over all and mix with a fork until smooth.
    3. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the centre of the cake comes out clean. Allow to cool.
    4. To make the icing: In a saucepan, combine chocolate, margarine and water. Cook over low heat until melted and smooth. Remove from heat and stir in vanilla and icing sugar. Fold in miniature marshmallows. Spread over cake.
