Tuna Salad with Mint and Cucumber

    This is the perfect light meal in the dog days of summer. Tuna is tossed with lettuce, cucumber, mint and a lemon vinaigrette.

    Serves: 6 

    • 1 (185g) tin tuna in water, drained
    • 185g crumbled garlic and herb feta cheese
    • 3 hearts of cos lettuce, torn into pieces
    • 1 cucumber, peeled and chopped
    • 4 spring onions, chopped
    • 1/4 cup (60ml) olive oil
    • 1/4 cup (60ml) lemon juice
    • 4 cloves garlic, minced
    • 1/4 cup chopped fresh parsley
    • 1/4 cup chopped fresh mint leaves
    • 1 pinch salt and pepper to taste

    1. In a large serving bowl, toss together the tuna, feta cheese, lettuce, cucumber and spring onion. In a smaller bowl, whisk together the olive oil, lemon juice, garlic, parsley, mint leaves, salt and pepper. Pour over salad and toss gently. Serve immediately.

    The salad was simple to make, but it lacked flavor balance. There were so many tart/tangy elements like the feta, lemon, garlic and tuna, but nothing sweet/savory to balance that out. It needs a bit of tweaking. The husband liked it, but then again, he enjoys tangy/tart foods more than I do.  -  31 May 2013


    I am so glad I happened upon this recipe as it's already become a mealtime favourite and it's so quick to prepare! This year I tossed my flowers in favour of herb in some planters this year, and am always on the lookout for new and different full-meal salad ideas, so this recipe was a perfect fit. However I do admit that reading the ingredients I was sort of thinking hmmmm...well I have to say the flavour particularly on account of the lemon and mint is simply outstanding! This recipe is quite flexible as well. Sometimes I substitute red onions and add a tbsp of balsamic vinegar to the dressing.     I loved this salad! I was looking for an alternative to a mayonnaise-based salad. This really hit the bill! I put it over spinach and it was a hit with the family!
