Easy Date Cake

    This date cake has a very easy and fast preparation and smells delightful while cooking. Ice if desired.

    Serves: 12 

    • 450g dates, pitted and chopped
    • 1 cup (250ml) boiling water
    • 1 teaspoon bicarb soda
    • 250g butter
    • 1 cup (200g) white sugar
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 1 1/2 cups (185g) plain flour
    • 1 teaspoon baking powder
    • 1 cup (115g) chopped walnuts

    1. Preheat oven to 180 degrees C. Lightly grease a 20x30cm pan. In a saucepan, combine dates, boiling water and bicarb soda. Let stand while mixing the batter.
    2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour, baking powder and chopped walnuts. Stir in the date mixture. Pour batter into prepared pan.
    3. Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the centre of the cake comes out clean. Allow to cool.

    I made this recipe 3 days ago and the only difference was I used brown sugar instead of white. This cake came out alot browner but the texture and taste was amazing. I also didn't have the same amount of dates so used less (about 250gm). Cooked it for 50min on 180o. Everyone said it was an amazing cake so today am making another one. Thank you  -  30 Jul 2014


    I changed the sugar to brown. It is an excellent moist cake with heaps of flavour.  -  10 Aug 2017


    I used 500gms of dates and halved the amount sugar. I used brown sugar instead of white. I made 24 individual muffins / cakes from this recipe. They tasted great and would use again.  -  03 Jan 2017
