I love pumpkin muffins and chocolate chip muffins but I didn't know they'd be so good combined! Even better still warm.

Serves: 24

  • 4 eggs
  • 2 cups (400g) white sugar
  • 400g pumpkin puree, tinned or home made
  • 1 1/2 cups (375ml) vegetable oil
  • 3 cups (375g) plain flour
  • 2 teaspoons bicarb soda
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 2 cups dark chocolate chips

  1. Preheat oven to 200 degrees C. Lightly grease two 12 cup muffin tins, or line with paper baking cups.
  2. Beat the eggs in a large bowl and mix in the sugar, pumpkin and oil.
  3. In a medium bowl, mix the flour, bicarb soda, baking powder, cinnamon and salt. Blend into the egg and pumpkin mixture. Fold in the chocolate chips. Transfer to the muffin pans.
  4. Bake in the preheated oven 15 to 20 minutes, or until a toothpick inserted in the centre comes out clean. Remove muffins from pans and cool on a wire rack.
