A lovely salad of three kinds of melon (honeydew melon, rockmelon, and watermelon), as well as strawberries, grapes and mint with some pickled ginger for spice.

1 honeydew melon, fruit removed with a melon baller
1 rockmelon, fruit removed with a melon baller
1/4 watermelon, fruit removed with a melon baller
1 bunch grapes
1 pineapple - peeled, cored and cut into chunks
2 tablespoons pickled ginger
1 cup (250ml) fresh orange juice
1/4 cup (65ml) fresh lime juice
1 tablespoon white sugar
1/4 cup chopped fresh mint
1 punnet fresh strawberries, hulled
4 sprigs fresh mint for garnish

Combine the honeydew, rockmelon, watermelon, grapes, pineapple, pickled ginger, orange juice, lime juice, sugar and chopped mint in a large bowl; stir to mix evenly. Cover the bowl with plastic wrap and refrigerate at least 1 hour.
Gently fold the strawberries into the fruit mixture. Garnish with the mint sprigs to serve.
So fresh & delicious! I substituted honey for the white sugar, and I'm pretty sure I used more mint than called for - but it was wonderful. I had never heard of pickled ginger, and look forward to using it often in the future now. Thanks for sharing!
