Moist Pecan Cake

    This is a wonderfully moist pecan cake, and very easy to make. I like to serve it with afternoon tea.

    Serves: 14 

    • 375g butter
    • 2 cups (250g) plain flour
    • 5 eggs
    • 2 cups (440g) white sugar
    • 1 teaspoon vanilla essence
    • 1 cup chopped pecans
    • 1/4 cup icing sugar for dusting

    1. Cream together butter and sugar. Add eggs one at a time beating after each one.
    2. Blend in the flour, vanilla essence and pecans. Pour into a greased and floured ring tin.
    3. Bake in a preheated 170 degrees C oven for 1 to 1 1/2 hours or until a toothpick inserted comes out clean. Remove from oven and remove cake from pan right away, cool then sprinkle with icing sugar.
