    It's simple to make and requires barely any cooking but the combination of flavours is the best! So different from a heavy pasta dish.

    Ingredients
    Serves: 5 

    • 300g spinach, rinsed
    • 500g bow tie pasta
    • 1/4 cup (65ml) olive oil
    • salt and pepper to taste
    • 2 1/2 cups cherry tomatoes, quartered
    • 125g crumbled goats cheese

    Directions
    Preparation:20min  ›  Cook:15min  ›  Ready in:35min 

    1. Remove stems from spinach and stack leaves together; chop into thin longer strips and set aside.
    2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and place in a large bowl.
    3. Drizzle olive oil over pasta and add salt and pepper to taste, spinach and tomatoes; gently toss.
    4. Add goats cheese and serve warm or room temperature.

    Great recipe. I tossed in a bit of crushed garlic for additional flavor. I was not sure what type of goat cheese to use so I picked chevre -- which was awesome. It made a creamy sauce to complement the spinach and tomatoes.  -  25 Jan 2001  (Review from Allrecipes USA and Canada)

    I used seasoned feta cheese, which had sun dried tomatoes and italian seasoning mixed in. This added a nice extra flavor to the pasta, though it is also good with plain feta!  -  12 Apr 2002  (Review from Allrecipes USA and Canada)
