This is a fancy coffee meringue icing best with coffee and chocolate cakes. Very easy to make and a nice change from regular icing.
1 1/2 cups (250g) packed light brown sugar
3 egg whites
1/4 cup (65ml) strong brewed coffee
1 teaspoon cream of tartar
1 teaspoon vanilla essence

In bottom of large double boiler bring water to boil then reduce to simmer. In top combine brown sugar, egg whites, coffee and cream of tartar. Beat with mixer 5 to 7 minutes, or until stiff peaks form. Remove from heat. Add vanilla and beat additional 3 minutes.
