    Chocolate, orange and tangy buttermilk perfectly balance in these delicious muffins. Great for breakfast or a snack.

    Ingredients
    Serves: 12 

    • 2 cups (250g) plain flour
    • 125g dark chocolate, grated
    • 2 teaspoons baking powder
    • 1 teaspoon bicarb soda
    • 1/2 teaspoon salt
    • 6 tablespoons margarine, softened
    • 3/4 cup (190g) white sugar
    • 2 eggs
    • 1 tablespoon orange zest
    • 1/4 cup (65ml) orange juice
    • 1/2 cup (125ml) buttermilk

    Directions
    Preparation:25min  ›  Cook:20min  ›  Ready in:45min 

    1. Preheat oven to 200 degrees C. Lightly grease a 12 cup muffin pan, or line with patty cups.
    2. In a medium bowl, mix flour, dark chocolate, baking powder, bicarb soda and salt.
    3. In a separate medium bowl, cream together margarine and sugar until smooth. Beat in the eggs one at a time then stir in the orange zest, orange juice and buttermilk. Pour into the flour mixture and mix just until evenly moist. Spoon batter into muffin cups.
    4. Bake for 15 to 20 minutes in the preheated oven, or until a toothpick inserted into the centre of a muffin comes out clean. Let muffins cool in the pan on a wire rack for at least 10 minutes before removing from the pan.

    it's yummy! i substituted the chocolate with chocolate chips. i couldn't find buttermilk so plain yogurt was the next best alternative. however, i couldn't taste the orange, i could smell the orange from the oven but it was lost in my mouth. therefore, i plan to add orange extract the next time. awesome muffins. i baked it for valentines and my frens loved it. thanks!  -  18 Feb 2007  (Review from Allrecipes USA and Canada)

    Tops! A light subtle flavor with touches of chocolate suspended throughout the cake. Very subtle and sophistocated. I used butter instead of margarine and cooked miniature muffins. Each morsel is a gourmet's delight. The combination of chocolate/orange makes it a little tricky to identify the flavor.     instead of using grated chocolate, i used the cocoa powder conversion of three squares. also, i used the one bowl method where i dumped everything in and mixed it up real good. they still came out great! with very little effort i got muffins that were very chocolatey with just the right amount of orange flavor.  -  19 Dec 2003  (Review from Allrecipes USA and Canada)
