Orange and Cranberry Scrolls

Scroll dough is made with orange juice and zest in your bread machine. It's rolled and baked after being stuffed with brown sugar, cardamom and dried cranberries.

Ingredients
Serves: 12 

  • 1 large orange
  • 5 tablespoons honey
  • 1 tablespoon vegetable oil
  • 320g bread flour
  • 130g wholemeal plain flour
  • 1 teaspoon salt
  • 2 teaspoons quick acting yeast
  • 190g soft dark brown sugar
  • 1 teaspoon ground cardamom
  • 90g dried cranberries

  1. Zest the orange. Peel orange, remove pips and cut flesh into chunks. Combine zest and fruit in a blender then puree. Pour orange pulp into bread machine pan.
  2. Add honey, oil, flour, salt and yeast. Select dough setting and start the bread machine. Adjust consistency with orange juice or flour as needed to achieve a soft pliable dough.
  3. When dough cycle is complete divide dough into 2 or 3 pieces. Roll out to a thickness of 1/2cm then sprinkle with brown sugar, cardamom and dried cranberries. Roll up dough and cut into 2cm - 4cm thick slices. Place rolls in a lightly greased baking dish, allowing enough room between the rolls so that they rise properly. Let rise in a warm spot for approximately 1 hour.
  4. Bake in a preheated 190 degrees C oven for 20 to 25 minutes. Remove from pan and place on wire rack. Serve warm.

Used different ingredients. I too believe there is too much cardamom in this recipe, but I countered it with 2 tsp. of cinnamon, and it helped a lot. I also added 2 Tbsp. of dark brown sugar to the dough as well. Very good alternative to more fattening breakfast breads, and the aroma is fabulous. - 14 Jul 2008

Altered ingredient amounts. These would have been great but - that's a LOT of cardamom. Cardamom is a very strong flavour and 1 teaspoon is just TOO much! I will make these again, but I'm going to use 1/2 the amount. - 14 Jul 2008

Altered ingredient amounts. I really like this! I'm rating it at a 4 only bc bf wasn't wild about it and bc I do agree that 1 tsp of cardamom is too much. I used 1/2 a tsp and it was plenty. Made the dough last night, let it rise overnight and popped it in the oven when I got up. Its hard for me to tell when these types of rolls are done--20 min wasn't enough, but I didn't realise until I served and they were doughy. But thats an oven thing I just need to figure out! Had some difficulty with the dough, as it wasn't wet enough. I used two clementines, and had to add about 175ml OJ and milk (didn't think about OJ until I had added 100ml milk -- more OJ would've been better). - 14 Jul 2008
