Orange Walnut Loaf

    A quick bread with a tasty orange flavour. Perfect with your afternoon tea. This recipe makes four mini loaves.

    Makes: 4 loaves

    • 5 tablespoons fresh orange juice
    • boiling water
    • 1 tablespoon orange zest
    • 2 tablespoons melted butter
    • 1 teaspoon vanilla extract
    • 1 egg
    • 280g plain flour
    • 1/4 teaspoon salt
    • 1 teaspoon baking powder
    • 1/2 teaspoon bicarb soda
    • 1 cup caster sugar
    • 60g chopped walnuts

    Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

    1. Preheat oven to 180 degrees C. Grease 3 to 4 mini loaf pans about 6cm x 12cm.
    2. Pour orange juice into a measuring cup and add enough boiling water to fill to 250ml.
    3. Pour into a bowl and add the zest, melted butter, vanilla, egg, flour, salt, baking powder, bicarb soda, sugar and nuts. Stir well and pour batter into the prepared pans.
    4. Bake for 45 minutes or until a small skewer inserted, comes out clean and bread is nicely browned.

    Used different ingredients. This recipe was easy to make and tasted great! It's pretty forgiving, too - I used pecans instead of walnuts and it tasted fine!  -  14 Jul 2008


    Used different ingredients. Excellent! So easy to make. I did use splenda instead of caster sugar. I made it in one regular-size loaf tin and it was done baking in 25 minutes. My first time making and eating orange bread. It was delicious!  -  14 Jul 2008


    the smell of orange is wonderful, but it's too sweet. i would recommend using a third of the sugar.  -  14 Jul 2008
