    You can make your own cream-filled sandwich biscuits as good as any you can buy and it is not hard at all. Enjoy!

    Serves: 12 

    • 3/4 cup (90g) plain flour
    • 1/2 teaspoon bicarb soda
    • 1/4 teaspoon baking powder
    • 1/2 teaspoon salt
    • 125g butter, softened
    • 1/2 cup (125g) peanut butter
    • 1/2 cup (110g) white sugar
    • 1/2 cup (75g) packed light brown sugar
    • 1 egg
    • 1 teaspoon vanilla essence
    • 1 cup (150g) quick cooking oats
    • 3 tablespoons butter, softened
    • 1 cup (150g) icing sugar
    • 1/2 cup (125g) smooth peanut butter
    • 2 1/2 tablespoons thickened cream

    1. In a large bowl cream together 1/2 cup butter or margarine, 1/2 cup peanut butter, white sugar, brown sugar and vanilla. Add egg and beat well.
    2. In another bowl combine the flour, bicarb soda, baking powder and salt. Add these dry ingredients to the creamed mixture. Stir. Add oatmeal and stir.
    3. Drop by teaspoons onto greased baking tray and press each mound down with a fork to form 5mm thick biscuits. Bake at 180 degrees C for 10 minutes, or until biscuits are a light brown.
    4. To Make Filling: Cream 3 tablespoons butter or margarine with the icing sugar, 1/2 cup smooth peanut butter and the cream. Spread filling onto half of the cooled biscuits then top with the other half to form sandwiches.
