    Raisins and cranberries make a biscuits with the perfect combination of sweet and tart. They also freeze very well. Enjoy!

    Ingredients
    Serves: 24 

    • 250g butter, softened
    • 1 cup (150g) packed brown sugar
    • 1 cup (220g) white sugar
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 2 cups (300g) quick cooking oats
    • 2 cups (250g) plain flour
    • 1 teaspoon bicarb soda
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 1 cup raisins
    • 1 cup dried cranberries

    1. Beat butter, sugars, eggs and vanilla for 5 minutes. In another bowl, combine oats, flour, bicarb soda, baking powder and salt. Add to butter mixture 1 cup at a time.
    2. Mix in raisins and cranberries.
    3. Drop by spoonfuls onto greased baking trays and bake for 12-14 minutes at 180 degrees C.
