Walnut Biscuit Bar

    This nutty slice is best made a day ahead so that the biscuit layers can soften and become part of the cake. This also freezes well.

    Serves: 6 

    • 15 digestive biscuits
    • 125g butter
    • 1 cup (150g) packed brown sugar
    • 1/2 cup (125ml) milk
    • 1 cup digestive biscuit crumbs
    • 1/2 cup (50g) desiccated coconut
    • 1/2 cup (60g) chopped walnuts
    • 1/2 cup chopped cherries
    • 2 1/2 cups (375g) icing sugar
    • 3 tablespoons butter
    • 3 tablespoons milk

    1. Line a 23cm square pan with digestive biscuits.
    2. Boil together 125g butter or margarine, 1 cup (150g) brown sugar and scant 1/2 cup (125ml) milk for two minutes.
    3. Remove from stove and stir in: crumbs, coconut, chopped walnuts and cherries. Pour on biscuits in pan. Place a layer of biscuits on top of filling. Spread with Butter Icing.
    4. To Make Butter Icing: Combine icing sugar, 3 tablespoons butter or margarine and approximately 3 tablespoons of milk, or amount needed to give a spreading consistency.

    SOOOOOOO good. If you try this, be prepared for a very sweet and very rich, but delicious treat. I love it. The filling sandwiched between grahamn crackers with that delicious icing on top was so easy to make and the cherries are the perfect addition in the filling!!
