This nutty slice is best made a day ahead so that the biscuit layers can soften and become part of the cake. This also freezes well.

Serves: 6 

  • 15 digestive biscuits
  • 125g butter
  • 1 cup (150g) packed brown sugar
  • 1/2 cup (125ml) milk
  • 1 cup digestive biscuit crumbs
  • 1/2 cup (50g) desiccated coconut
  • 1/2 cup (60g) chopped walnuts
  • 1/2 cup chopped cherries
  • 2 1/2 cups (375g) icing sugar
  • 3 tablespoons butter
  • 3 tablespoons milk

  1. Line a 23cm square pan with digestive biscuits.
  2. Boil together 125g butter or margarine, 1 cup (150g) brown sugar and scant 1/2 cup (125ml) milk for two minutes.
  3. Remove from stove and stir in: crumbs, coconut, chopped walnuts and cherries. Pour on biscuits in pan. Place a layer of biscuits on top of filling. Spread with Butter Icing.
  4. To Make Butter Icing: Combine icing sugar, 3 tablespoons butter or margarine and approximately 3 tablespoons of milk, or amount needed to give a spreading consistency.
