    This is a really great icing recipe for those who can't get enough nuts. Excellent on apple, pumpkin and carrot cakes.

    Serves: 15 

    • 250g cream cheese
    • 65g butter, softened
    • 4 cups (600g) sifted icing sugar
    • 1 cup chopped pecans

    1. In a large bowl, beat softened butter and cream cheese until well blended.
    2. Add powdered sugar and vanilla. Beat until creamy and add chopped nuts. Spread on cooled cake.
