In large frypan over medium heat cook mince and mushrooms in butter, until mince is brown. Add stock cubes and sherry and stir until dissolved. Add zucchini and onion and cook, uncovered, until zucchini is crisp-tender. Serve over cooked pasta.
Delicious! My partner went back for more, after saying where is the sauce. I used less meat and less zucchini as it was all I had in the fridge, but added more mushrooms and kept the other quantities the same. Would definitely make this again - 19 Sep 2014
