Walnut Bars
Lovely rich and chewy walnut bars, very easy to make and perfect for holidays and picnics. My kids love them.
Ingredients
Serves: 12
- 2 eggs
- 1 teaspoon vanilla essence
- 1/4 teaspoon bicarb soda
- 1/3 cup (40g) plain flour
- 2 tablespoons butter
- 1/4 teaspoon salt
- 1 cup (125g) chopped walnuts
- 1 cup (150g) packed brown sugar
- 1/3 cup (60g) icing sugar for decoration

- Preheat oven to 180 degrees C.
- Beat eggs and vanilla together in mixing bowl. Add in brown sugar, flour, bicarb soda, salt and walnuts. Mix until well blended.
- Melt the butter in a 20cm square pan. Pour the batter into the pan and bake for 20 to 25 minutes, until firm to the touch.
- While bars are still hot, loosen with a spatula and turn out onto greaseproof paper, buttered side up. Dust with icing sugar while warm and cut into squares.

Are you supposed to be able to get the bars out of the pan before cutting them? That's what I tried… I had trouble with that and my single baked cookie broke into about 5 pieces. Luckily they were still warm and I could stick them back together. And confectioners sugar, I learned, covers up a bunch of imperfections.
