Cherry Fruitcake

    This is a very easy fruitcake but it needs to be prepared a day ahead. You can use mixed candied fruit instead of the cherries and pineapple.

    Serves: 12 

    • 500g digestive biscuit crumbs
    • 185g red glace cherries, coarsely chopped
    • 185g green glace cherries, coarsely chopped
    • 185g candied pineapple, coarsely chopped
    • 2 (400g) tins sweetened condensed milk
    • 1 1/2 cups chopped pecans

    1. Line one loaf tin with plastic wrap, allowing wrap to hang over edges a few inches.
    2. In a large bowl combine the biscuit crumbs, red and green cherries, pineapple, pecans and the sweetened condensed milk, using your hands mix thoroughly. Place mixture into lined pan and cover well.
    3. Freeze for at least 8 hours or overnight before serving. When ready to serve; invert onto a serving platter, remove pan and plastic wrap, and slice. Store any remaining cake in the freezer.
