Peanut Butter Rice Bubbles Bars

    A big hit with the kids and easy enough they can help make them! These are no-bake peanut butter and crispy rice bars covered in chocolate.

    Serves: 24 

    • 125g butter, softened
    • 2 cups (250g) creamy peanut butter
    • 2 cups (300g) icing sugar
    • 3 cups Rice Bubbles
    • 1 cup dark chocolate chips

    1. Butter a 20x30cm baking dish. In a medium bowl, stir together the butter, peanut butter and icing sugar until well blended. Mix in the Rice Bubbles so that it is evenly distributed. Press the mixture into the prepared pan.
    2. In the microwave or over a double boiler, melt chocolate chips, stirring occasionally until smooth. Spread the melted chocolate evenly over the peanut butter bars. Refrigerate until set before cutting into bars.

    Very good! I took this to our New Year's Day dinner, and it was a huge hit. It tasted like a mixture of a reese's cup and a butterfinger (with the crunch from the rice cereal). I really didn't measure, but I used one stick of butter, creamy peanut butter and powdered sugar, mixed by hand, then added the rice cereal until it came together.
