    There are many variations on bruschetta but this one takes some of the work out of it by using cheese with garlic and herbs already added. Great party food.

    Serves: 12 

    • 3 tablespoons olive oil
    • 2 tablespoons balsamic vinegar
    • 3 tablespoons chopped fresh basil
    • 2 cloves garlic, minced
    • 7 roma tomatoes, chopped
    • salt and ground black pepper to taste
    • 1 baguette, cut into 1cm thick slices
    • 125g cream cheese with garlic and herbs

    1. Whisk together the olive oil, balsamic vinegar, basil and garlic in a bowl. Stir in the chopped tomatoes; season to taste with salt and pepper. Cover; place in the refrigerator and marinate for 20 minutes.
    2. Preheat oven to 180 degrees C. Spread the bread slices in a single layer on a large baking pan.
    3. Bake in the oven until golden, about 10 minutes. Remove to cool on a wire rack.
    4. When the bread is cool spread the cream cheese evenly over each slice. Using a slotted spoon, spoon some of the tomato mixture over each slice.
