This fruitcake is so sweet and yummy and it keeps indefinitely in the refrigerator, only getting better with age. Very simple to make, too.


Serves: 30 

  • 500g glace cherries
  • 500g candied pineapple
  • 500g pitted dates
  • 500g chopped pecans
  • 900g shredded coconut
  • 3 tablespoons plain flour
  • 2 (400g) tins sweetened condensed milk

  1. Preheat oven to 150 degrees C. Lightly grease a 23cm springform tin. Line bottom of pan with greased baking paper. Set aside.
  2. Chop fruit and nuts in a large mixing bowl. Add coconut and mix well with hands. Stir in flour then sweetened condensed milk. Blend well.
  3. Pack firmly in prepared cake tin. Bake for 1 1/2 hours. Remove from oven. Run knife around edge of cake and remove rim of pan. When barely warm, remove bottom or tin and paper from cake.
