Crunchy Cabbage and Noodle Salad

    Uncooked instant noodles add a delicious crunch to this simple but delicious cabbage salad. Perfect for potlucks or picnics and very quick to make.

    Serves: 6 

    • 1 medium head cabbage, grated
    • 1 bunch spring onions, chopped
    • 2 (85g) packets chicken flavoured instant noodles
    • 125g slivered almonds, toasted
    • 1/2 cup (125ml) olive oil
    • 2 tablespoons white sugar
    • 3 tablespoons distilled white vinegar

    Preparation:10min  ›  Extra time:1hour chilling  ›  Ready in:1hour10min 

    1. In a large bowl combine the cabbage, spring onions, noodles and almonds.
    2. Prepare the dressing by whisking together the oil, sugar, vinegar and seasoning packets. Pour over cabbage mixture and mix well to coat. Refrigerate until chilled and serve.

    This was so much fun to make. I am a vegetarian so I used an Indian noodles pack called "maggi" & used its seasonings. It tasted really good, though I would like to reduce the amount of oil.
