Try these juicy and crunchy muffins. They're a little more interesting that regular oat muffins because of the addition of muesli.

    Ingredients
    Serves: 12

    • 1 cup apple sauce
    • 1/3 cup (85ml) vegetable oil
    • 2/3 cup (150g) white sugar
    • 1 egg
    • 1/2 cup (125ml) water
    • 1 1/2 cups (185g) plain flour
    • 1 teaspoon bicarb soda
    • 1 1/2 teaspoons ground cinnamon
    • 1/2 teaspoon ground allspice
    • 1/2 teaspoon salt
    • 1 1/4 cups muesli
    • 1 cup raisins

    Directions
    Preparation:25min  ›  Cook:25min  ›  Ready in:50min

    1. Preheat oven to 190 degrees C. Grease one 12-cup muffin tin.
    2. In a large bowl beat the applesauce, oil egg, sugar and water together for 2 minutes at medium speed.
    3. In a medium bowl combine the flour, cinnamon, salt, bicarb soda, allspice and muesli together. Add the dry ingredients to the apple sauce mixture. Beat on low speed until combined.
    4. Spoon batter into the prepared muffin tin filling each cup 3/4 full. Bake in the preheated oven for 20 to 25 minutes or until the tops are golden brown and spring back lightly when touched. Remove from pans immediately to cool.

I made these using raisin bran instead of muesli, and they turned out well. Very moist.  -  04 Jul 2001  (Review from Allrecipes USA and Canada)

Delicious!!...I read the reviews and decided to cut out most of the oil and replace it with applesauce, leave out the water and because my muesli has a lot of fruit in it, I only used 1/2 cup of raisins. Because my mind goes straight to brown sugar when I think apples and cinnamon, I devided the sugar and used half brown and half white. They are lovely and moist, and will make these again.  -  02 Sep 2008  (Review from Allrecipes USA and Canada)

I loved the taste and texture of these muffins. I did replace the water with a half cup of gingerbread tea since the only spice I had was cinnamon. I loved it so much with the tea, that the second time I made them I added Sugar Plum spice tea instead of the half cup of water. I had a generic granola/flake cereal. I added cranberries and rasins one time, and also loved that. I did replace the white sugar with the brown, and sprinkled extra brown sugar on top before baking. Thank you for the recipe.  -  21 Oct 2008  (Review from Allrecipes USA and Canada)
